Jalapeño Cheddar Sausage Balls

Ingredients:

  • 3 lb. breakfast sausage (we like to use 2 lb. mild + 1 lb. spicy)
  • 1 batch prepared cornbread, crumbled (we use Jiffy and prepare as directed, adding one diced jalapeño and 1 c. shredded cheddar cheese to the batter)
  • 16 oz. prepared pimiento cheese
  • The Real Kansas City Style rub, to taste
  • The Real Sweet and Smoky sauce
  • Blues Hog Raspberry Chipotle sauce

Instructions:

  1. Mix sausage and crumbled cornbread until incorporated.
  2. Form a golf ball-sized portion of the sausage mixture into a patty. Scoop a small amount of the cheese into the center, then fold the sausage around the cheese to form a ball. Repeat with remaining ingredients.
  3. Season sausage balls with Kansas City Style rub.
  4. Cook at 300 degrees (This can be done in the oven, but we prefer to run these on our Gateway Drum Smokers) until internal temperature on the sausage reaches 165 degrees (50-60 minutes).
  5. While sausage balls are cooking, mix your sauce — one part Sweet and Smoky with one part Raspberry Chipotle.
  6. Drizzle sauce over finished sausage balls and enjoy!
